• RESETTER Spicy Cilantro Lime "Cauliflower Rice"

INGREDIENTS:

  • 4 Cups Riced Cauliflower (about 1 1/4 heads of cauliflower)
  • 1/2 tsp. Organic Garlic, Crushed
  • 1 Organic Lime, Zest & Juice
  • 1 Tbsp Chopped Organic Cilantro
  • 1/4 tsp. Sea Salt
  • 1/4 tsp. Freshly Ground Pepper
  • 1/8 tsp. Organic Cayenne Pepper
  • Optional: 1 Tbsp. Grass Fed Butter

DIRECTIONS:

  1. Equipment: Parchment Paper, Food Processor, Vitamix, or powerful blender
  2. Mise en Place: Chop, measure and mix all ingredients (other than the cauliflower in a small bowl.
  3. Remove the core of the cauliflower & break into medium sized florets. In 3 batches place the cauliflower in the food processor/blender. Pulse until the cauliflower resembles rice; repeat until all the cauliflower has been "riced". (Be careful to not over-blend or it will become "cauliflower mash", which is delicious, but a different recipe entirely.)
  4. Line the bottom of a steamer pan with parchment paper, then pour in the riced cauliflower.
  5. Steam for 8-10 minutes until cooked & tender.
  6. Place cauliflower in serving bowl & pour the mixture of all the other ingredients on top. Gently blend and serve while hot.
